Cupcake cone treats – happy Friday!

Ever since the Treats Truck started selling these, I kept reading about it everywhere! So I had to see for myself what all the fuss was about. Instead of going there (cuz that would have been, you know, too easy and logical of a choice), I decided to make them. How come I had never even heard of such delicious treats before? Apparently, they’re a common treat among elementary school students. It has been for years. Where was I? Think of all the pounds of extra fat I missed out on!!

Anyway, I used a basic yellow cake recipe to fill the cones but didn’t have time to make the frosting. So I borrowed some from Ms. Crocker. (Is it Mrs.? Is Betty Crocker married?)

Recipe: Basic yellow cake

Ingredients:

2 cups of cake flour*
2 teaspoons of baking powder
1/2 teaspoon of salt
1/2 cup of butter, softened
1 cup of sugar
3 large eggs, room temperature
2 teaspoons of vanilla
3/4 cup whole milk (I used skim since I had it)

(*Combine 2 cups of all-purpose flour minus 4 tbs, then add 4 tbs of cornstarch to make 2 cups of cake flour)

Procedure:

1. Heat oven to 350°F.

2. In bowl, combine flour, baking powder, and salt with a wire whisk and set aside.

3. Cream butter and sugar until light and fluffy. Beat in eggs, one at a time. Add vanilla and mix until combined. Slowly add flour, alternately with milk. At end of addition batter should be smooth.

4. Line a baking sheet with cones, right side up. Fill each cone a little more than about 1/3 of the way.

5. Bake for 20 to 25 minutes. Cool before frosting.

A couple of thoughts:

- How come you’re left frosting-less after the first couple of bites?! Maybe I could layer batter with chocolate chips next time to give it that extra chocolate goodness in every other bite.

- The cones got a little soggy after baking. Is there a way to prevent that?

    What a great idea! I love it! I don’t have kids yet, but this sure makes me want to head down that path sooner rather than later. I can just imagine…
