Kimchi Jeh Yook bokkeum – Sweet spicy salty

27 Sep

Hello everyone!!! The site was down for the past few days due to a major mistake on my part. A HUGE hats off to my friend A, who literally saved this site! And of course, thanks to all 3 of you for reading! :)

This is one of my favorite dishes to eat. The combination of sweet, salty and spicy goes amazingly with the textures and the unadulterated flavor of tofu and the rice cake. Yum!!!

You might be wondering how different Dweji bulgogi is from this dish. Jeh Yook bokkeum is made with a slightly different cut of pork and has a lot more flavor. While Dweji bulgogi is marinated, this dish is made right in the frying pan, then served immediately. The two dishes seem very similar but the vary greatly in taste.

Recipe: Kimchi jeh yook bokkeum – Spicy grilled pork with Kimchi

Ingredients:

1.5 lbs of sliced pork (Sahm gyup sal would be perfect)
1 package of firm tofu, boiled
1/2 cup of sliced rice cakes (Dduk gook dduk – the kind used in soup)
1/2 cup of aged Kimchi
1 medium onion, diced into cubes
1/4 cup of gochujang
2 tbsp of soy sauce
2 tbsp of sugar
2 stalks of scallion, cut into little cubes
1 Jalepeno, diced
4 baby carrots (1/3 of a regular carrot)
3 cloves of minced garlic
Hint of Sesame Oil

Procedure:

1. In a bowl, mix together gochujang, soy sauce, sugar, garlic, and sesame oil. Set aside.

2. In a pot, boil whole tofu in 2 cups of water for 6-7 minutes over high heat. Remove from hot water and move to a bowl. Set aside.

3. In the same pot, cook the rice cakes in a pot of boiling water for 3 minutes. Remove from water and set aside (again).

4. In a medium frying pan coated with corn oil, cook pork over high heat with Kimchi. I would not recommend using EVOO as that would flavor the pork.

5. Add sauce mix from step 1 to the meat as it cooks and continue to stir. Lower heat to medium.

6. After 3-4 minutes of cooking on each side, add vegetables. Turn heat to low.

7. Add rice cakes to the pan.

8. Cook the vegetables and meat for another couple of minutes. (When the meat is looking saucy and a bit glossy from the sugar, it is done. )

9. Serve over the block of cooked tofu, alongside rice.
