What you should make this weekend

You know what? This weekend, after you sleep in a little, why don’t you make some breakfast?

How about some banana almond pancakes from scratch?

With some scrambled eggs?

Keep it simple, you know? Thaw some frozen sausage links or some bacon?

And brew some coffee in your coffee maker. Or some tea, if you’d prefer.

Then, turn on this song by Jack Johnson –  especially if it’s raining outside! And relax.

It might look something like this:

Recipe: Banana almond pancakes

Ingredients:

1 cup of all-purpose flour
1 teaspoon of baking powder
1 cup of milk, room temperature
2 tablespoons of butter, melted
1/2 tablespoon of sugar
1 egg, room temperature
1 teaspoon of salt
1 teaspoon of almond extract
1 banana

1. Sift flour, baking powder, sugar and salt into a bowl.

2. Add egg and milk. Then add almond extract. Stir stir stir! Like my tiny whisk?

3. The batter should ripple when you let it drip, and pile on top of each other.

4. Using a ladle, pour batter onto well greased skillet over medium heat. When you see little bubbles forming, all around, you are ready to flip.

5. Slice bananas to put across the top, or you can cook them if you’d prefer. I am not a fan of cooked bananas so it’s up to you.

Recipe: Super easy scrambled eggs

Ingredients:

3 eggs (I used 3 for 2 people, feel free to use 4)
3 tablespoons of milk or cream
Dash of salt

Procedure:

1. Crack eggs open and add them to a bowl.

2. Add milk and salt. Use a fork to whisk and break up the eggs.

3. Pour eggs onto heated frying pan. Gently keep moving the eggs around with a spatula, making sure they don’t stick to the pan.

4. This is important – keep the frying pan on the heat for thirty seconds, then off for thirty seconds. KeepCook thoroughly, about 5 minutes. And you’re done!

    I’ve always made my scrambled eggs straight up with salt & pepper only. What does the cream do?

    Your picture is so pretty, and it makes me sad that I’m far too lazy to make breakfast on any given day. Occasionally I make it up at brunch, but that’s bound to be at about noon and only if we have no plans for hte day.

    i used to make pancakes for the boys every saturday when i was overseas. i had to feed 5 guys and i became very efficient with making pancakes using three pan at the same time. i had the “flip” down too. those were the days. i think my old roommate made me banana pancakes for my birthday last year. good times. pancakes and scrambled eggs-you can’t go wrong.
