Who wants seaweed soup?

Here is my dinner from the other night.

Coincidentally, both of my side dishes happen to have radish, and are from my mom. On the left- seasoned dried radish bits and radish Kimchi on the right.
While I was always a fan of the dried, roasted seaweed, I didn’t really like the soupy seaweed too much. There was something not so appetizing about the slimy texture. I guess I don’t really mind it as much now.
In Korean culture, seaweed soup is always given to mothers who just gave birth because it helps you replenish the blood lost during childbirth. Not sure if that’s scientific or not. And it doesn’t matter how old you are; seaweed soup is a must have on your birthday.
Ingredients:
A handful of dried seaweed
1/4 pound of beef
2 cups of water
1.5 tablespoons of gook ganjang (soup soy sauce – MUCH saltier than regular soy sauce)
1/2 tablespoon of minced garlic
1/3 tablespoon of sesame oil
1 stalk of green onion, sliced
Procedure:
1. Immerse seaweed pieces in a bowl of cold water. Let it sit for 10 minutes.

2. Voila! It will look like this after the 10 minutes. Use a scissor to cut into smaller pieces.


3. Slice beef into thin strips.

4. In a pot over medium heat, cook beef and sesame oil until meat is browned.

5. Add water, seaweed, soy sauce and garlic and bring to a boil. Then lower heat and simmer for an additional 15-16 minutes.

6. Add green onions and serve.
