Homemade Purple chips

baked potato chips

Are you wondering why I’m telling you to cook flower petals? If you look carefully, you will see purple sweet potato slices!

I like trying to cook with new produce every chance that I get. I saw these at the grocery store and couldn’t resist!  Then I realized that Blue Terra Chips® are probably from purple sweet potatoes so I decided to try making it myself. (Correction – Blue chips are made from blue potatoes, not purple sweet potatoes!)

It was so simple! All I did was use a vegetable peeler to peel the skin, then instead of using a knife, I continue using the peeler to cut thin slices.

After that, I spread out the slices on a baking sheet, making sure none of them overlap and then sprinkled with some sea salt. It baked in 375 oven for 6-7 minutes. Keep in mind that the thinner slices got cooked faster so you might have to take those out first. I made the chips with 3 small sized purple sweet potatoes, yielding about 3.5 cups total.

If you want the extra crunch, go ahead and fry them up in oil ;) These were delicious baked though!!

You really are inspiring me to try cooking, even tho i’ve always been more of an eating fan.

I love blue potato chips! The terra chips are actually not made from sweet potatoes, but from actual blue potatoes…they grow them up here in Maine (all over the grocery stores and farmers markets) and I love them! Those look really good, too. Sweet potato chips rock.

Anna – thanks for the clarification! I never even knew there were blue potatoes… or even purple sweet potatoes, for that matter! :)
