Cheeseburgers with grilled onions in bbq sauce and mushrooms with a side of coleslaw and a pickle

I wanted to welcome sunshine and warm weather back into my life, since burgers and coleslaw totally reminds me of warm weather! I can’t wait to retire my winter coat and walk around without a jacket!

One of the most important ingredients when creating a delicious burger is the meat. I bought fresh ground beef, which costs a little bit more but is totally worth it. I would have loved to ground up some steak but I don’t have a food processor so that wasn’t an option.

I attempted to pair this burger with homemade coleslaw (success) and sweet potato fries (fail). I tried to bake the sweet potatoes but they weren’t crispy at all. The smaller pieces burned while the other pieces barely cooked through. Instead, they looked like strips of carrots!

The coleslaw, on the other hand, was super easy to prepare. I chopped up some purple cabbage and regular cabbage, with a handful carrots. Then I added mayonnaise, honey mustard dressing, a hint of vinegar along with some salt and pepper to taste. I let it rest in the fridge overnight, once again, for optimal flavor intermingling.

Recipe: Homemade cheeseburgers
Makes 10-12 (hamburger bun sized) patties

Ingredients:

3 pounds of ground beef
1 package of hamburger rolls
10-12 slices of cheese (your preference)
1 head of romaine lettuce
2 large sweet onions, sliced into thin circles
3 tomatoes, sliced
3 cups of mushrooms
3.5 tablespoons of Worcestershire sauce
Mayonnaise
Seasalt and fresh ground pepper to taste

Procedure:

1. Place beef into a large mixing bowl with a lid. Add Worcestershire sauce and generously season with seasalt and pepper. Mix thoroughly. Close lid and place in fridge for at least 2 hours, or overnight.

2. Prepare all the vegetables – rinse lettuce, chop tomatoes, onions and mushrooms. Set aside.

3. Heat the oven to 375 F.

4. Divide the beef into even pieces, using a butter knife. Then roll into balls and form patties.

5. When ready to grill, heat up a cast iron pan with oil until very hot. Place patties into the pan and sear, for about 2 minutes on each side.

6. Place the cast iron pan in the oven for 2 minutes. Add cheese and place back in the oven for another 2 minutes, until cheese melts. Cook beef longer if you want well done. You can also toast the buns at this point.

7. Remove pan and bread from oven and let the meat rest for 10 minutes, covered, before serving.

8. While the meat is resting, grill onions with oil, until cooked through. Repeat with mushrooms.

9. Don’t forget to smear mayo on the inside of the buns so that the bun doesn’t get soggy! Serve with lettuce, tomatoes and toppings.

My sister had the brilliant idea of mixing a little BBQ sauce into the grilled onions. YUM! Instead of American Cheese, I grated some Parmigiano-Reggiano to add to my burger. As you can see, I was clearly not patient enough to give it time for the cheese to melt! Hungry hungry monster, am I.

    Sweet potato fries are challenging… especially when baking them in the oven (as opposed to deep frying them). This burger looks so tasty… there’s nothing like a classic simple burger to usher in the spring/summer seasons!!

    that looks absolutely ambitiously delicious! Fries MUST be crispy. If you ever figure out how to make the SP fries cripsy, do share!

    Yeah.. it’s hard to get the fries to be crispy without using the deep fryer!

    My next goal is to try this: cut them up, soak it in cold water for about an hour to get rid of the starch. Dry really well and then toss with a extra virgin olive oil before baking.

    Let’s all try it and report back =)

    I do the same for my burgers, except for putting them in the oven, I tend to make mine thinner by flattening them out quite a bit (1/2″??), then press the middle even thinner (thumb). This lets you get a evenly cooked burger, though you sacrifice ending up with a nice thick juicy burger. Also, I use 80/20 ground beef… sure the fat is not good for you, but you get a juicy tasty burger. Linda always tries to get me to buy 85/15 or even 90/10 *gasp*. Do you know what happens when you fry up a 90/10 burger on cast iron? You get a thick dry hockey puck and a nice burn mark(s) on your cast iron. Also, no need for oil when using 80/20. =)

    5.5 After you flip the burger (for the 1st time) smash it down with your spatula. This will give the new raw side a chance to get 100% contact with the pan so you get an evenly cooked burger (courtesy of Wendy’s) with a nice shape.

    I’m not so sure about soaking the sweet potato in water, only because a lot of times starch makes things crispier (ie. coating chicken in starch and pan-frying). Also, even if you were to deep fry the fries, it would still be soggy, you’d have to let them rest and re-fry to get that crispy skin. I dont’ really have a solution for you on this one… maybe bake 2x with a coating of olive oil each time??

    I agree with you – 20% fat content is a MUST for a good burger! Did you work at Wendy’s? :)

    As for the fries, i know about the starch thing but I read on a different blog that the soaking method works. I will really have to think about that one! Thanks for your suggestions!
