Beef curry with yammy yams

This Japanese block of curry from S&B is called Golden Curry.

All you need to do is boil some vegetables and water, then mix in the curry block. I added some mushrooms, onions, and leftover produce from the week for a quick yet hearty meal. This is seriously the fastest and the easiest thing to make when you’re starving and ready to chew off your left arm!

I feel silly calling this a recipe, so I will give you the abridged version of how I made it. First, slice/dice whatever vegetables you have, then throw them into a big pot of cold water. Let’s say 3 cups, for the sake of argument. Then turn the heat to high and cover.

Boil for about 6-7 minutes, or until all the vegetables have cooked. Add a protein if you want (I added beef). Break off curry pieces(from the smallest box you can find) and stir. Cook for another 3-5 minutes and you’re done.

Serve with rice, or any type of bread. 

Instead of using potatoes, use Korean sweet potatoes. They taste like, well, sweet potatoes but look like regular potatoes and adds an interesting element to this dish. I used yams, which also worked well but the similarity in color made it hard to distinguish between carrots and yams.

A word of warning – I’ve been told that this is not the healthiest way to eat curry, even though it tastes delicious (Thanks for the tip, E!). =)

    This is indeed a recipe!! I love S&B Japanese curry. I havn’t made this myself, but it reminds me of my childhood when my mom would make it. And my Indian friends would come over, and they loved it, too!!

    This is one of my all time favorite meals. Yes, it’s a little high in calories but if you throw in a ton of veggies and use brown rice, it should compensate for the packaged curry. :)

    Yams or sweet potatoes are a good idea. I always put carrots in even though I hate cooked carrots (pet peeve), weird eh? Maybe just for the color.

    sweet potato?? yummmm, what a great idea! I went to Curry-ya a couple of months ago and had their veggie curry – among other delicious veggies, it had pumpkin in it, and it was really really good. Similar to sweet potato.

    Awww, I love the Vermont one! I also love java curry (I don’t have a favorite between S&B and House, so I don’t remember which one makes java curry), which has a slightly richer flavor. I totally make the curry differently though lol. Still looks totally yummy!
