Hummus croquette with spicy mayo

Check out this bomb diggity new recipe that I ended up with!!! (Can you feel the excitement radiating through this post?! No?!? Why Not?!?!?)

Let’s rewind – I made a magical batch of hummus last week. I call it magical because after eating it for 3 days straight, I still had a tub leftover! It was too delicious to waste. It was time for a reinvention.

Naturally, the first thing that came to mind is to make Falafels, which in essence, is chick peas + spices, then deep fried. I was not in a deep frying mood, so I tried to think of a slightly healthier version.

Then I remembered the whole wheat bread crumbs that I made a few days ago! I was eager to use that as it took me so long to make the bread crumbs without a food processor! I let pieces of bread dry on the counter for a couple of days, then ground it against a sieve. When it was finally done, I added dry oregano and dry thyme. It was a big chunkier than the store bought kind, but I don’t mind one bit!

Make the hummus according to these instructions, then roll them into small round balls. On a plate full of crumbs, roll it around until all surface area is covered.

On a hot pan, cook over high heat until breadcrumbs are crispy and done. It might not hold its shape that well, so be careful when handling. Add as much as Sriracha sauce to the mayo as you want. Serve immediately.

Seriously, dear readers. What are you waiting for? This is so delicious that I’m tempted to go out and buy a bag of chick peas, let it soak in a pot of water overnight, cook them for over an hour, mash it together with minced garlic, cumin, and lemon, roll it into small circles, then roll it around in some homemade whole wheat bread crumbs, throw it into a pan, dip it in some dipping sauce then shove it in my mouth, one by one.

Some of you may not want to do ALL of the fore mentioned things. I totally understand! Then pick up some hummus and breadcrumbs from the store and give this a try!!!!

    That looks really delicious. I am also without a food processor; for homemade breadcrumbs (which I only make for stuffing, for some reason), I oven-dry bread and then hand crumble it. Yes, it’s time consuming and my arms ache afterwards, but I figure I don’t bake so I don’t knead bread… so I need some sort of cooking-related upper-arm work out right? LOL

    Yvo – I made hummus with a magic bullet. Sad is my life! It doesn’t work so well if there isn’t a lot of liquid! :) I should have baked it…DUH…it would have been easier! Thanks for the tip!
