I recently discovered eggplant. I, as Sean mentions, had tasted it before when cooked incorrectly so avoided it like nobodies business. I’ll let you know how my attempt at this recipe goes.

Love what you did with the eggplant! A lot of my friends are scared of eating eggplant but it’s because they’ve had it when it’s been prepared incorrectly.

Also, I’m glad you’ve become unvegetarianized!
