@Fatima -  Why are you apologizing for asking questions? ;) I do not mind at all! 

To answer your question about eggs - the eggs not only add extra protein to the dish but help the noodles cook better by adding moisture. You can skip it if you&#039;d like, though I think it just makes the dish even yummier! 

I think my chives got rough and tough because of my mistake of  not soaking the noodles long enough. If you soak the noodles longer, you won&#039;t have the same problem. =) Or you can cook vegetables separately, like you mentioned before. Let me know how it goes! :D</description>
