Spring giveaway!

Put your puffy winter jackets away – spring is upon us! Hooray! The weather was amazing this past weekend, lifting everyone’s spirits!

To welcome spring, it’s time for another giveaway! The kind folks at Goose Valley Natural Foods sent me their 100% organic wild rice to try. Did you know that wild rice is a naturally gluten-free whole grain?

I actually cooked one of the packages yesterday just so I could tell you how delicious this rice really is. The instructions are right on the package, so it’s virtually impossible to mess up! I like how the kernels fluff, absorbing all the flavor of the stock you cook it in. The rice was absolutely tasty and I would make it again!

Try pairing fish or meat with rice pilaf and some kumquat salsa (kumquat, mint, hint of oil, diced red onions) for a delicious, refreshing, spring meal. (Sorry there are no photos of the actual rice).

    What a really cool giveaway! I’d pair the pilaf with miso-glazed pan fried salmon and a green salad.

    Also, my favorite part about spring is the warmer temps and green!

    i LOVE rice pilaf with a pan-seared salmon (finished in the oven), and a quick broccoli (steam for 4 min. or so, then a quick romp in the frying pan with some sliced garlic, salt, pepper and olive oil). i could also see this pilaf getting used in a cold application, though – maybe cooked in a flavorful stock and then mixed with some arugula, dried cranberries, toasted walnuts, and topped with a bit of salty cheese (a feta or the like).

    My favorite thing about Spring is stepping out of my deary flourescent-lighted high school and into the fresh, sunny, cool, outdoors, getting into my car, plugging in the ipod, rolling down all the windows and the sun roof, and driving around with the wind in my hair and the sun on my face, admiring all the beautiful nature that is blooming all around!

    Can you believe that every time I go to comment, I always think “cold” first? I don’t know WHY!

    Kumquat is the cutest word ever! It reminds me of Lord Farquad from Shrek.

    I loved reading about everyone’s favorite part of spring. Mine is definitely longer daylight and the fact that everything is coming to life again after a season of death and hibernation. It makes me appreciate winter because without winter, there really wouldn’t be spring.
