Meal for one: salmon mint noodles

This dish was born out of sheer hunger, after a long day of working. Call me crazy, but if you invite me to an event, especially one going on for more than a couple of hours, the first thing that pops into my head is, will there be food? If not, can I get food before-hand? Or bring food?

When I’m hungry, I can’t focus on anything! I turn into a cranky monster, and needless to say, no fun to be around whatsoever. If you haven’t experienced this in person, consider yourself lucky! :)

Taking the time to focus on creating a delicious meal is, of course, preferred. However, there are times when your stomach won’t let you get away with not eating for another minute. Instead of going out to pick-up something to eat, I spend 8-10 minutes on making a super easy noodle dish.

Since I ran out of soba noodles, I used whatever else I could find in my pantry. I found Bihon noodles once to include in summer rolls, so I just experimented (I would not recommend using them, if you can help it). Try to use buckwheat soba noodles, or even just regular pasta. Just be aware that canned salmon has a lot of sodium in it already, so be sure to use caution when adding a thick sauce like Hoisin.

Recipe: salmon mint noodles
One lonely serving

Ingredients:

1 serving of noodles (soba, penne, spaghetti – anything, really)
1 6 oz. can of salmon
2 teaspoons of Hoisin sauce
1 stalk of scallion, cut at an angle
2 cloves of garlic, grated
3 mint leaves, chiffonade
Sprinkle of sesame seeds

Procedure:

1. Bring 2 cups of water to a boil.

2. In a frying pan, add salmon (drained from can), Hoisin sauce, garlic, scallion. Cook until warmed over high heat, about 3 minutes.

3. Add pasta to boiling water. Cook according to package instructions. Drain.

4. Add salmon ingredients from pan on top of noodles. Add mint pieces. Sprinkle sesame seeds. Eat.

    Argggh, so much seafood lately. Although I won’t lie, that looks really good for a 10 minute meal. Looks like way more prep time went into it at least.
