Party food: bacon wrapped potatoes

Can you tell that I’m now officially obsessed with Sriracha sauce? To be more specific, Sriracha sauce mixed with other condiments? If you think about it, there are a lot of possibilities! Sriracha with Hoisin is also another clear winner, which is a must-have when eating Vietnamese Pho. Can you think of other winning combinations?

Let’s face it – bacon wrapped anything is not earth shatteringly complicated or new, but one thing’s for sure – it is freaken delicious! And I’m sure your party guests will ask you for more!

Recipe: bacon wrapped potatoes
Makes 5 dozen (you will probably want to make more than that though!)

Ingredients:

5 medium sized Idaho potatoes
1 package of regular bacon (avoid maple syrup flavored, brown sugar, etc – too much flavor), cut into thirds
5 dozen toothpicks
2 cups of mayonnaise
3 teaspoons of dried thyme
2 teaspoons of Sriracha sauce (depending on your preference)
1 teaspoon of olive oil
A pinch of salt

Procedure:

1. In a large pot, bring 4 cups of water to a boil. Add a pinch of salt.

2. Meanwhile, peel the potatoes. On a cutting board, start with one potato. Cut off the ends (you will end up with two circles). Quarter the remaining potato. Then cut each piece into thirds. Voila! You now have 12 even pieces.

3. Add potatoes to what is now hopefully, boiling water. Very important: set the timer for 4 minutes. We want to cook the potatoes about halfway.

4. After 4 minutes, remove from heat. Drain. Move potatoes into a large bowl.

5. Mix in dried thyme and olive oil to the potatoes. Stir well.

6. Leave the potatoes to cool for about 7-8 minutes. Meanwhile, you can cut your bacon strips into thirds, using a kitchen scissor. (If you want more bacon in each bite, cut bacon strips in half).

7. While you’re waiting, simply mix Sriracha sauce with mayo, little at a time, until you get desired spiciness.

8. Wrap bacon slice around potato, then secure with toothpick. Repeat with the rest of potatoes.

9. Place on baking sheet and ake in the oven at 350 for 5 minutes on each side, until golden crispy.

    Sriracha sauce is the only thing that kept my college leftovers palatable last year!

    sriracha and japanese mayo on shrimp omelets (!!!)

    it’s also really good with a little bit of peanut butter when you’re eating celery or carrots.

    my brother and i usually squirt some in our breakfast sandwiches as well. that stuff is crack

    I bought a new bottle of siracha! I don’t think I’ve seen bacon wrapped potatoes before, but I like the idea, especially with the dipping sauce.
