Recipe: Tomato and Asparagus Frittata

21 Sep

In my book, eggs are a must have item when you’re eating brunch. Frittata is a baked version of omelet, or a crustless version of quiche. I really hate it when omelets become soggy from the moisture releases from vegetables, so baking the eggs ensures that the eggs will be light and fluffy.  And it’s a great way to use leftover vegetables that are in my fridge!

I actually made this frittata for my friend Sharon’s bridal shower, as a part of a complete brunch menu. I thought this would be a good way to incorporate eggs into the menu for a bunch of people.

I made it the night before, and heated up in the oven right before serving. I unfortunately forgot one of the pans at home, so we didn’t have enough to go around. At first, I was really upset at myself for forgetting but there was nothing I could do at that point.

Happy bridal shower, Sharon!

Steam wand = yummy scrambled eggs

16 Nov

Who would have ever guessed that you could make anything else with the milk frother from your espresso machine?

I wish I could take credit for this marvelous idea but I can’t. I came across a post on Amateur Gourmet last week and decided to give it a try. Apparently, restaurants like Gottino make their eggs this way!

CSA: Yammy omelet with fresh parsley

22 Oct

Community Supported Agriculture (CSA) is when a farmer offers a certain number of “shares” to the public. Interested consumers then purchase a share to receive a box of seasonal produce each week throughout the farming season. The produce is fairly priced, local grown, and in my case, organic.

My friend E (check out her awesome design work!), came over with R a couple of weeks ago. R brought wine and we were eating, laughing, and chatting it up from the moment we got there, right up until we went to sleep. Then we woke up the next morning and ate some more. Thanks for coming, friends!

I had yams from my CSA share from the week before, and wanted to incorporate it into our breakfast that day. I grated the yams like I would carrots; the color are close enough, after all!

The yams were a bit crunchy, as they were undercooked, and not as sweet as I would have liked. Next time, I will saute the yams separately first, so that it adds a nice, soft, starchy texture to the omelet. I didn’t really do a great job, as you can tell from the photo. But it was quick and yummy!

CSA: Zucchini frittata with fresh herbs

First order of business: it’s a somber Friday here in NYC, as we remember the families and the lives that were lost today, 8 years ago. Our thoughts are with you all.

Now, back to the recipe. At first, I was going to make quiche. But since I didn’t have enough ingredients for a pie crust, I took the easy way out and skipped it altogether.

Got a couple of yummy shallots and zucchini from my CSA share, along with bunches of parsley and basil. I was really happy to use incorporate all of those ingredients for this one dish.

This was a part of brunch served with some fruit salad, maple bacon, muffins from my last post and coffee. This was a scrumptious fritatta, and I would totally make it again. Next time, I’ll double this recipe and make two pans of it and save some for later!

A few friends were over, so I was distracted by good conversation and by Ava, the adorable baby that was giggling next to me! Forgive me for not getting a good final photo.

What’s so special about French toast?

Looks like there are some more newcomers, so I’d like to just say- welcome! Not sure how you got here, but it’s great to have you! As always, feel free to email me suggestions/comments/questions. I’d love to hear from you :) .

Now, I acknowledge that devoting an entire post to French toast might not be so exciting for some of you. It’s true. I never thought that this would be “special” enough to post about, but here I am.

I’m here to shed some light on the secret to making really good French toast.

What you should make this weekend

14 Nov

You know what? This weekend, after you sleep in a little, why don’t you make some breakfast?

How about some banana almond pancakes from scratch?

With some scrambled eggs?

Keep it simple, you know? Thaw some frozen sausage links or some bacon?

And brew some coffee in your coffee maker. Or some tea, if you’d prefer.

Then, turn on this song by Jack Johnson –  especially if it’s raining outside! And relax.

Poached eggs and smoothie

21 Oct

I LOVE poached eggs, especially on the weekends when I actually have some time to make them. My weekly breakfast ritual usually involves some whole wheat toast with peanut butter. Or when it’s not too cold, some cereal at the office.

Poached eggs are healthier since they’re not fried, but boiled. I find it very difficult to strike the perfect balance between cooking the white completely and having the yolk cooked just slightly, but not so much that it forms a solid. Though I know that raw eggs make me a candidate for salmonella, nothing is as good as that runny yolk soaking up the bread!

There are machines that will help you get the perfect poached egg. No need. Just practice and you will get the perfect poached egg in no time. I am still learning, and it’s getting better. If you have any helpful tips on poaching eggs, leave them in the comments!

5-minute breakfast

How many servings of fruit do you get on a daily basis?

I try to eat about 3 servings a day. Instead of eating these separately, I thought it might be fun to make a salad. So I peeled and diced a peach, an apple, and a kiwi. Then I added a teaspoon of cream cheese just to see what it would taste like. It sounds gross but it was really yummy.
