Recipe: Jerk Chicken

It’s been quite a week here in the East Coast. At first, there was an earthquake in Virginia and we felt one of the aftershocks here in NYC. Now, there are warnings to evacuate and fears of over-flooding. I don’t know what to think, so I’m just going to go about my business and hope that we were all over prepared for Irene!
I’ve often wondered what kind of seasonings make up the delicious flavor profile of jerk sauce. I always assumed it would involve some crazy Caribbean seasoning that is not available here. To my delight, I learned that jerk sauce is relatively easy to make! I’m adding this to my list of regular dishes to enjoy.
