Thai mango chicken

Lately, for whatever reason, my palette has been attracted to the sweet + sour + salty combination found in Southeast Asian dishes. This dish combines the same elements as my last eggplant entry – fish sauce, rice wine, chili sauce – but this time, it adds the sweetness of fresh mangoes!

I love mangoes! I’ve only actually seen Irwin and Kent varieties while growing up in New York City. I never knew that there were so many different kinds of mangoes until recently. In Haiti, I tasted some of the best mangoes I’ve ever had. They are the yellow kind and they are called Madame Francis mangoes. I love mangoes so much that I don’t even mind having to floss after eating one!

I realized that I never actually cook with mangoes, so I thought I’d give this dish a try. I’ve had it numerous times at Malaysian restaurants, and often found it to be too sweet, so I used a little bit of honey. It was a refreshing combination of sweet and sour, and went wonderfully with brown rice.

World’s largest falafel event + deliciousness fail

I attended a work event today. It involved breaking a Guinness Book of World Records for the largest falafel ball, coming in strong at 24 pounds! Coincidentally, this past week, I had a really bad cooking day, and made one of the worst tasting meals ever!

Sometimes, no matter how good you are at following recipes, something will go awry in the cooking process. It is super frustrating when you’re unable to figure out why the recipe turned out the way it did. Lucky for you, dear reader, this is not one of those cases. I know exactly what went wrong here!

It’s been a long time since I’ve made pita bread at home, so I thought I’d try a new recipe to go with this hummus and falafel recipe. I ended up with roasted chic pea salad and a very dry hummus that I don’t even want to eat!

Lemony chicken

I bought four pieces of chicken thighs the other day and wanted to experiment with a new recipe. Then I found a lemon in my fridge. But I was scratching my head because don’t even remember what I bought it for!

Do you ever forget about what items are in your fridge? I try to write down what I bought on a notepad attached to the fridge door but it still happens! I’ve found slimy cucumber along with some forgotten fresh basil leaves that had turned black… what a waste! :(

For this dish, I would recommend using chicken thighs with skin for more flavor. I added a little bit of water to balance out the acidity.

Dinosaur, a rolling pin and celery

I saw this at the grocery store:

It reminded me of the yummy ribs that we’d used to eat in upstate New York! The Dinosaur sauce has a deep habernano spicy smokiness to it, which I looove.

So….
