Tofu fajitas with Herbs de Provence

My coworker, E(hi!) gave me a ziplock bag containing Herbs de Provence. According to Wikipedia, “Herbs de Provence (Provençal herbs) is a mixture of dried herbs from Provence invented in the 1970s. The mixture typically contains savory, fennel, basil, thyme, and lavender flowers and other herbs.”

The wikipedia entry goes on to suggest adding it before grilling fish or meat. While I was experimenting with spices, I happened to remember that I had this and decided to use it. The lavender flavor was light, adding a smooth aroma to the sweetness of the peppers. It also looks pretty too!

Lemony chicken

I bought four pieces of chicken thighs the other day and wanted to experiment with a new recipe. Then I found a lemon in my fridge. But I was scratching my head because don’t even remember what I bought it for!

Do you ever forget about what items are in your fridge? I try to write down what I bought on a notepad attached to the fridge door but it still happens! I’ve found slimy cucumber along with some forgotten fresh basil leaves that had turned black… what a waste! :(

For this dish, I would recommend using chicken thighs with skin for more flavor. I added a little bit of water to balance out the acidity.

Fire Roasted Vegetables

Don’t you hate it when you’re all ready to make something and realize that you either don’t have enough of a key ingredient? Or worse yet, it spoiled?!

That’s what happened to me. I had a beautiful yellow bell pepper but I waited too long to cook it. Since I had mentally gotten ready to cook, there was no turning back. I went to the grocery store really quick and got bell peppers. They didn’t have any yellow ones so I grabbed a couple of red and green ones.
