Meal for one: salmon mint noodles

This dish was born out of sheer hunger, after a long day of working. Call me crazy, but if you invite me to an event, especially one going on for more than a couple of hours, the first thing that pops into my head is, will there be food? If not, can I get food before-hand? Or bring food?

When I’m hungry, I can’t focus on anything! I turn into a cranky monster, and needless to say, no fun to be around whatsoever. If you haven’t experienced this in person, consider yourself lucky! :)

Taking the time to focus on creating a delicious meal is, of course, preferred. However, there are times when your stomach won’t let you get away with not eating for another minute. Instead of going out to pick-up something to eat, I spend 8-10 minutes on making a super easy noodle dish.

Simple pesto pasta

Somehow, I managed to cook a green meal the other day. I don’t mean green, as in environmentally friendly, but a monochromatic meal.

I made this delicious meal on the spot using some Thai basil, along with steamed Yu Choy vegetables as a side dish. I didn’t even realize how green my meal was until I took a photo. As we often eat with our eyes, it was not as aesthetically pleasing to look at, though it tasted really good.

Instead of a non-green colored produce for garnish, all I could find was a lonely walnut. So there it is. Maybe my meal would be more appropriate for St. Patrick’s Day? In any case, this would definitely fall under the category of “delicious weeknight meal in under 20 minutes.” (If you make the pesto in advance, even quicker!)

Pork tenderloin with apples and cranberries

Happy first day of spring, everyone! But I say that very loosely as it snowed in NYC this morning!

I’ve been meaning to create a dish that consists of using apples as a part of the sauce, since that is not something that I naturally associate with pork. I also threw in a handful of dried cranberries, which added a lot to the dish.

After eating this dish, I wanted to try making a different meal for the next day with the leftover meat. I added grilled sweet bell peppers and a little bit of salsa to make carbless pork fajitas, which were super delicious!
