Recipe: Gazpacho (Chilled Soup)

Here’s a conversation I had with my parents regarding gazpacho:

“What is that,” my mom asked. “Pasta sauce?”
Me: “No, mom. It’s cold tomato soup.”
Dad: “It looks like pasta sauce to me too! Where’s the pasta?”
Me: “It’s cold soup that you make without using the stove.”
*blank stare*

After explaining that gazpacho is a cold Spanish tomato-based raw vegetable soup, the idea of cold soup still didn’t make sense to my parents. But that’s ok. I know people who think it’s weird that Korean people drink cold beef broth in Nangmyun, so to each his own.

Mango salsa with crispy tilapia

The springtime is upon us and it’s time to put away the bulky sweaters, scarves, and the boots with da fur (da fur!). I’m so tired of my winter clothes and can’t wait to break out the flip flops!

Interestingly enough, I made a similar dish a while back, waving goodbye to summer. Now I’m creating the dish with similar ingredients and welcoming spring!

I prepared the salsa in advance so that it could sit in the fridge overnight. A little bit of planning goes a long way! The mango is sweet and refreshing, with just the right amount of acidity to complement the fish.

Fresh basil leaves – Oh the possibilities!

At the farmer’s market last week, I grabbed 1 bunch of basil for $2. Then I realized that I’d have to use it up before it went bad. Would I be able to use it all up before the fragrant colorful greens transform into mushy brown stuff? (Side note: I did find a trick to keeping herbs fresh longer but it was too late by the time I got around to it. :( )

So the race was on. I was determined to win. Against time, that is.
